Freeze drying is becoming more popular every day, and Derby Farms asked us to freeze-dry our Brittle as a joint effort. So a few months ago, we started our first batches of freeze-dried brittle and were so excited by all of the opportunities this could potentially bring to our small business. We dove in head first and purchased our own freeze-dry machine so we could freeze-dry ALL of brittle and that evolved into freeze-drying all kinds of candies. It has been a real adventure and the benefits of freeze-drying are exceptional. Not just for extending shelf life but an entirely different texture and experience.
